Salmon and Tomatoes

Snowy days and reduced sunlight in the middle of winter can result in individuals not getting enough vitamin D. Salmon is a great source of this important vitamin. Salmon paired with tomatoes is a wonderful way to add beneficial plant nutrients to ones diet.

Lycopene is an important carotenoid found in tomatoes and is an example of a phytonutrient found in many superfoods. Lycopene has high antioxidant activity, is protective against cardiovascular disease and is also reported to be protective against some cancers. Lycopene may also help reduce levels of bad cholesterol. Tomatoes are full of flavor, low in carbohydrate, have a high water content and provide moderate levels of fiber. A variety of side dishes such as rice, pasta, yams, quinoa and sweet potatoes can be combined with salmon and tomatoes for a very delicious meal.
