Tomato Beef Stew

Tomato beef stew is a savory dish that can be served with boiled green plantains or fried ripe plantains, rice or yam. The addition of spinach or Swiss Chard to this stew increases the health benefits of this delicious stew.

  1. Chop the onions, tomatoes, bell peppers and ginger into small pieces and place in separate containers or bowls. Chop the Swiss Chard in small pieces (finely chopped) and place in a separate bowl.
  2. Cook beef stew meat with just enough water to slightly cover the beef, add onion slices and dried crayfish and cook for about 15 minutes.
  3. Heat vegetable oil in a sauté pan or sauce pan. Add chopped onions, bell peppers and tomatoes. Add crayfish, thyme, cayenne pepper, bouillon cube (break up the cube and add to the sauce)
  4. Sauté vegetables, herbs and spices for 5-8 minutes
  5. Add tomato puree, beef without the stock and cook till red stew is mixed and oil rises up to the top of sauce.
  6. Add finely chopped Swiss Chard or spinach to the stew, cook for about 5 minutes, and then turn off the stove. Serve stew with boiled green plantains, fried ripe plantains, rice or boiled yam.
