Nigerian Greens
Nigerian greens (Amaranthus hybridus) also known as African spinach, Lagos spinach or amaranth greens are a delicious mildly tasting vegetable that can be eaten alone, added to soups, smoothies, salads or used to prepare yam pottage. These greens of the Amaranthaceae family are also known as callaloo in Jamaica. The mild flavor is in contrast to ugwu leaves. However, while the flavor is stronger than regular spinach, the greens can be used in recipes that call for spinach.
Rich in vitamins and minerals
Nigerian greens are a superfood. The nutrient dense leaves and stems contain antioxidants such as vitamins C and E, and vitamins A, B6 and B9 (folate). The greens are also rich in calcium, iron, zinc, copper, manganese and the phytonutrients beta-carotene, zeaxanthin, chlorophyll and lutein.
